Aligoté from Chassey-le-camp. 50% whole bunch, 50% de-stemmed by hand. The stems were kept in the middle of the tank, with free run juice poured over the top. Macerated for 6 months without touching anything. This cuvée was the result of just taking the free run juice (no pressed juice). Only a small amount was produced. Not fined or filtered. Zero SO2 added at any stage.
Lovely clear orange colour. Quite aromatic this year. Apricot, peach, apple, flowers, gentle lemongrass notes, all so clean and bright. Clean, straight and linear delivery. Nice and frosty mouthfeel at the front, and good tension on the back palate. Flavours are lean and fresh. Apple mixed with mandarin, a little hint of salt and nice bitterness to finish it off. Super dry and refreshing with exceptional balance.
