Certified organic. 45% Pinot Noir, 40% Chardonnay, 15% Meunier – all Chamery Premier Cru fruit, grown on south-east facing slopes of calcareous clay, studded with limestone pebbles, and subsoils of sand rich in fossil shells. Fermentation by indigenous yeasts, then transferred to 4-year old barrels (228L and 400L) for 7 months, where malo occurs and the wines rest on the lees. The wine was then bottled in April 2017 with second fermentation initiated by cultured yeast. Disgorged after 24 months in April 2019 with zero dosage. Zero SO2 at any stage. 12% alc.
Delicate and chalky on the nose. Sand and sea shell, sea breeze, yellow apples. A light touch of freshly baked bread. So elegant, gently brushes your palate like a feather. Lemons, chalky minerality – but in a loose-knit way. Balance is out of control. Such delicate bubbles that playfully bounce on the tongue. Smooth and effortless finesse and drive. Everything is so refined and subtle. Freshly sliced almonds on the nose. Blossoms and lemon verbena. This is so light on the palate you feel lifted. Seamless, dreamy and long. Same feeling as lying down on a plush hotel bed in a luxury suite. What an exquisite beauty!
