This wine sees a bit more extraction with 15-25 days maceration, and is then aged in barrels aged 3-5 years old, for 12 months. The Merlot dominates and is supported by the Syrah and Cabernet Franc. 15 mg/L SO2 at bottling.
Very interesting nose. There is some tamarind, canned beetroot, small berries, and faint herbaceous notes. After a while it starts to smell like a Bordeaux. Currants, chocolate, a hint of green pepper, and wild flowers. Fresh to taste, with soft sticky tannins, and a long finish. Here you can taste tamarind more than smell. Gravelly on the nose too. Quite soft and easy to drink, with lots of interesting components that give it a point of difference. A very nice winter wine to enjoy wth food, especially hearty dishes and red meats.
