70% Chardonnay, 30% Savagnin from 20-60 year old vines from the Petit Curoulet parcel, grown on blue marl. Ferment commences in tank, then the wine goes into 500 litre barrels (4-5 years old) to complete both alcoholic and malolactic fermentation. The wine is aged on lees for 18 months and topped up weekly.

Smells frosty and pure. Limes and pears and snow. Yellow apples. Frosty on the palate. So, so clean! The ultimate restraint. Every year it’s less texture and more refinement. This is really good. Glacial on the palate, like sucking on an ice block. Subtle flavours, with lemon and apples, and lots of white florals. Damn that’s good. Really limestone fresh and sea shell mineral too. Gentle and soft and effortless to drink. So well balanced and polished with no rough edges. Sublime.
