This is really cool. 1/3 Gamay, 1/3 Pinot Noir, 1/3 Chardonnay. The vines are 40 years old on average, and grow on clay and limestone soils. The grapes are carefully sorted by hand, with only the best making the final cut. They are layered mille-feuille style in the tank by variety (whole bunch) and undergo cold carbonic maceration for 15 days. Afterwards, they are pressed manually in a vertical wooden press. The whole process is quite time consuming, with lots of careful manual labour involved. Ageing is in a mix of old barrels and concrete tanks, for 6 months. 10ppm SO2 before bottling.
Light red colour. Heavenly aromas - a nicely balanced and clean expression - no wildness that you often find with these blends, everything is well integrated and seamless. A mix of roses, strawberries and milk chocolate. Finishes with hints of baking spices and warm soil – a beautiful smooth and lifted perfume. The aromas are free and not tarnished by barrels etc. Very light on the front, as it expands across the palate. Light strawberry and raspberry fruit, with some apple and nectarine. It’s light and lifted throughout, with a mild density and weight. Very well made, as are most of his wines. Really cool. Very fine tannins and tension – everything is subtle and balanced. Delicious! Serve slightly chilled.
