Mainly Cabernet Franc with 6 other varieties - all organic. De-stemmed by hand. Fermented separately, then 30 months élevage in old demi-muid. Kept in bottle for another 20 months before release.

Note: Sometimes these wines have a slight reduction, and may need a decant. With some air, they really expose their true selves. Incredibly complex nose. Deep cassis, baking spice, violets, liquorice and dark berries amongst other notes – it has that aged cabernet franc smell, but is still quite lifted and pretty. The way the aromas evolve is insane. The palate is a harmonious journey through all the different varieties – the mid palate is so full, but it manages to stay effortless in its delivery, rather than heavy. It has a nice tension to it, and brings about a relaxing sensation as you stop in your tracks to try and understand what is taking place. Layers and layers unfold, and the acidity carries it through the waves. Don’t be in a rush to drink this – make a night of it, sit down and eat and enjoy its company – you won’t regret it. I personally also can’t wait to see this age – to re-taste again and again over the years.
