Chenin Blanc from the 'Les Cailloux' parcel, at the top of Montbenault. The vines are 30 years old and the soils are predominantly schist and quartz, producing wines with intense minerality. Pressed with an old vertical press, then fermented in tank. Aged in neutral barrels for 12 months. Racked to tank to settle for a few months, and 20ppm SO2 added. Not fined or filtered.
Poïèsis is an ancient Greek verb that means bringing something into being that did not exist before. It is the act of creation or making, and is where the the word Poetry was derived from.
Small reduction under which sits an intense minerality, almost like freshly cut stone or rocks. With air it opens up displaying restrained notes of lemon verbena, crunchy nectarine, beeswax, sliced apple, some citrus and a hint of honey. On the palate it is straight and linear with plenty of drive. The texture softens as it warms, but overall remains relatively taught and tense. Mouthwatering acidity and some of the strongest mineral sensations I've ever come across. I recommend a decant if drinking now, and of course this will age very well too.
